Almond Butter Swirl Brownie Mix

A delicious dessert with a healthy twist, all starting with your favorite brownie mix! Gluten free and dairy free option available.

 

Ingredients

  • 1lb (454g, or 16oz) bag of brownie mix

  • 2 eggs

  • 2 tbsp of water or milk of choice

  • 1 tsp vanilla extract

  • 1/4 cup (50g) Greek yogurt of choice (lactose free or dairy free alternatives work here too)

  • 1/4 cup (56g) almond butter of choice

Directions

  1. Preheat the oven to 350F and grease an 8x8 brownie pan with nonstick spray. Line with parchment paper for easier cleanup.

  2. In a bowl, whisk together the eggs with the vanilla extract. Then whisk in the Greek yogurt and water or milk of choice.

  3. Dump the brownie mix into the bowl with the liquid ingredients, and fold together with a silicon spatula. It may look like it is not coming together for some time, but keep mixing and be patient. The brownie mix will eventually mix well into the liquid (if needed add another tablespoon of water, milk, or a little more yogurt).

  4. Pour the brownie batter into the prepared pan, and swirl the almond butter gently on top of the batter. Use the back of a spoon or a chopstick to help make beautiful swirls. If your almond butter is too stiff, microwave it for a few seconds until it is easier to pour and spread.

  5. Bake for 30-35 minutes until a toothpick comes out clean.

  6. Let rest for 10 minutes before cutting in.

Notes:

  • I used a vanilla flavored Greek yogurt for extra flavor. Feel free to use any Greek or regular yogurt you want, just be aware that the flavor you choose may impact the flavor of the brownies a bit.
