One Pot Fried Rice - Mexican Style
Change up your rice game with this Mexican style fried rice! Clean up made simple with this one pot recipe.
Ingredients
1 tablespoon olive oil
1 onion, diced
1 red bell pepper, diced
2 cloves of garlic, diced (optional)
1 cup corn kernels
1 can (15.5oz) black beans, drained and rinsed
1 can (14.5oz) diced tomatoes, with juices
2 teaspoons chili powder
1 tsp cumin
1 cup white rice (short, medium, or long all work here)
salt to taste
ground black pepper to taste
Directions
In a large pot, heat the olive oil over medium high heat. Add the onion and bell pepper and cook, stirring frequently, until the vegetables become tender, about 5 minutes.
Add the garlic, corn, and black beans, and cook until the corn and beans are heated through, about 2 minutes.
Stir in 1 1/2 cups of water, the diced tomatoes and their juices, chili powder, cumin, rice, and a pinch of salt and pepper. Bring to a boil, cover the pot with a lid, and reduce the heat to simmer until the rice is cooked, about 20 minutes.
Notes:
Feel free to garnish with fresh chopped cilantro, a squeeze of lime, and add toppings such as cheese, sour cream, avocado, lettuce.
