Baked Donuts - Three Ways

Skip the bakery, put on your favorite baking apron, and get creative making these homemade cake donuts at home! (Gluten free, dairy free options)

 

Ingredients

  • 60 ml milk (any lactose free or dairy free alternative works here too)

  • 50g greek yogurt or regular yogurt (any other lactose free or dairy free alternative works here too)

  • 1 egg

  • 30g unsalted butter, melted and cooled (use oil or other lactose free or dairy free alternative if needed)

  • 1 tsp vanilla extract

  • 120g plain flour (use gluten free flour if needed, add 1/2 tsp xanthan gum to the flour mix if yours doesn’t have it already mixed in)

  • 70g granulated sugar

  • 1/4 tsp baking soda

  • 1 tsp baking powder

Directions

  1. Preheat oven to 350F. Spray donut pan with nonstick spray.

  2. Whisk together the egg with 1 tsp of vanilla extract. Then add in the butter, milk, sugar, yogurt, and mix until combined.

  3. Stir in the baking soda and baking powder into the flour. Then add this flour mix into the bowl with the wet ingredients. Stir until smooth.

  4. Fill the donut pans up about 3/4 of the way, this recipes makes about 6 donuts. Bake donuts for about 10-12 minutes, until they are lightly golden on top and a toothpick comes out clean.

  5. Remove from the oven, and let cool for 5 minutes. Then remove donuts from the pan and let cool on a wire rack.

    Powdered Sugar donuts

    1. When the donuts are cooled, place the donuts into a Ziploc bag containing powdered sugar. Shake around gently until donut is covered with powdered sugar.

    Chocolate covered donuts

    1. Cut up squares of your favorite chocolate, or use chocolate chips, and place chocolate into a bowl and melt in the microwave in intervals of 15 seconds. At each interval, be sure to stir the chocolate. When melted, work quickly, and use a small spatula to spread the chocolate onto the donut. Feel free to drizzle the chocolate onto your donuts as well. It is hard to go wrong with chocolate!

    Glazed donuts

    Ingredients

    • 150g powdered sugar

    • 2 tbsp milk (any lactose free or dairy free alternative works here too)

    • 1 tsp vanilla (or any other flavoring such as maple extract, or even strawberry)

    • pink food coloring (or any other color, also optional)

    Directions

    1. Stir together all the ingredients into a bowl until drizzle-like consistency. Add more liquid if too thick, add more powdered sugar if too loose.

    2. Dip the donuts into the glaze, and top with rainbow sprinkles!

Notes:

  • Feel free to experiment with other toppings such as cinnamon sugar!
