Easy Fish or Chicken Tacos

Ingredients

  • 1 1/2 pounds of your choice of meat (I prefer chicken, shrimp, or white fish for these tacos)

  • 1 red bell pepper sliced thinly

  • 1 onion sliced thinly

  • 1 tsp salt

  • black pepper to taste

  • 2 tsp chili powder

  • 1/2 tsp garlic powder

  • 1/2 tsp ground cumin

  • 1/2 tsp smoked paprika

  • lime wedges

  • fresh cilantro for garnish

  • Gluten free corn tortillas (or other tortillas of choice)

Directions

  1. In a bowl, mix together the spices and toss in your meat of choice (shrimp, cubed chicken, cubed fish).

  2. Drizzle some oil into a pan on medium heat, sauté the onions and bell peppers until cooked through. Set the veggies aside.

  3. In the same pan, throw in the meat of choice, and cook until nicely browned and cooked through, about 4-5 minutes each side, depending on size of meat. (Chicken and shrimp are done at an internal temp of 165F, white fish such as mahi mahi, cod, or tilapia are done at 145F).

  4. Mix in the veggie mixture into the pan when meat is done cooking.

  5. Wrap a stack of corn tortillas in a damp paper towel and microwave until warm and flexible (about 30-45 seconds).

  6. Take your taco meat and veggies and serve on corn tortillas. Garnish with fresh cilantro and lime juice if desired.

Notes:

  • I like to assemble one or two tacos at a time if using corn tortillas, as they tend to break very easily when hit with moisture.

  • Feel free to omit chili powder or use fresh garlic instead of garlic powder. Adjust spice ratio as needed.

  • Omit bell peppers and onions if needed, serve with fresh pico de gallo, or add your favorite salsa of choice! Add sour cream, cheese, lettuce, guacamole, make these tacos your own work of art! It’s hard to go wrong on Taco Tuesday!
