No Bake Cookie Dough Fudge Bars
This easy no bake treat is the perfect cross between chocolate fudge and cookie dough, made with wholesome ingredients to satisfy your soul and your sweet tooth! Gluten free and vegan options available.
Ingredients
For the bottom chocolate fudge layer
1/2 cup choice of chocolate chips
2 tablespoons of melted coconut oil (any other oil of choice works here too)
1/4 cup milk of choice (any lactose and dairy free work great, I used soy)
1/4 cacao powder
1/4 cup almond butter (peanut butter, cashew butter, sun butter, and tahini all work great)
For the top cookie dough layer
3/4 cup almond flour
2 1/2 tablespoons of melted coconut oil (any other oil of choice works here too)
2 tablespoons milk of choice (any lactose and dairy free work great, I used soy)
3 tablespoons of honey or maple syrup (or equivalent liquid sweetener)
1 tsp vanilla extract
1/3 cup chocolate chips
Directions
Spray a bread pan with nonstick spray and then line with parchment paper (so the parchment paper sticks to the bread pan)
For the fudge layer, melt the chocolate chips with coconut oil in 15 second increments and stir in between increments until completely melted. Then, combine the melted chocolate with cocoa powder, almond butter, and milk until mixture is smooth. Spread the mixture evenly into the prepared bread pan. Refrigerate for 30 minutes.
While you are waiting, prep the cookie dough layer. In a bowl, combine the almond flour, milk, honey or maple syrup, and coconut oil until the mixture is smooth. Fold in the chocolate chips.
When the 30 minutes have passed, spread the cookie dough layer on top of the chocolate fudge layer. Top with rainbow sprinkles if your heart desires! Pop it back into the fridge for another 30 minutes to firm up.

Notes:
This dessert gets better the longer is has to firm up in the fridge, making this the perfect meal prep dessert for the week!
Feel free to use flavored nut butters in this recipe, get creative with flavor combinations!
